Rivareno x Akira Urata: Matcha in the Clouds

Our third chef flavour is made of silky white chocolate ganache with organic matcha and white chocolate chips.
Akira Urata (previous head chef at Italian institution Fratelli Paradiso and now owner of Pasta E Basta) grew up in a matcha growing region of Japan and we created this new flavour together. Matcha is a fascinating ingredient and when we have used it in the past it always has a great following.
While developing a flavour that represents a chef, that our customers will also love, coming up with the name is the other fun part. While ‘Matcha in the Clouds was a winner, Akira also recommended “HATSUKOI” which means first love. ‘The taste of bitter and sweet reminds me of my first love. It wasn’t successful my first love but the process was a sweet memory and result was bitter…’
