Rivareno x Gabriele Taddeucci: Torta della Nonna, Chef Exclusive
Gabriele Taddeucci (aka as @thetuscanboy) apart from being famous for his excellent food, is also famous for bringing flavour to some of the finest gluten free food you will ever try (cook book coming soon).
Recently taken on as the new Executive Chef at Capella Sydney, he has been welcomed into the Rivareno Gelato laboratorio. The flavour is based on fond memories from his childhood. “If I think about my childhood, there’s no doubt that the Torta della Nonna takes the first place!
It was the homemade tart for special occasions made by my nonna and it brings me back lots of memories. When I found out I was coeliac I had to stop eating it for many years, until I came up with the right gluten free recipe. Since then, it’s probably the tart I like to make and to eat the most”. The flavour we have made is an Italian custard gelato with lemon peel, the special crunch in this gelato is thanks to Gabriele’s own gluten free shortbread.
