Lychees  are in, and they are fantastic! We use only fresh lychees, and hand peel them  one by one in our "laboratorio Italiano". There's not a lot of pulp, so it's a lot of hard work given we use over 55% fruit... But it's worth it!! SILKY SMOOTH, CREAMY, and ・
