RIVARENO SORBETS

At RivaReno Gelato, our sorbets are made using around 60% real fruit – no fruit pastes, purees or syrups and no artificial flavourings, colourings, preservatives or hydrogenated fats commonly used by gelato makers. Our sorbets are never icy, instead always silky smooth and full of flavour. The amazing texture and flavour is achieved by the high proportion of fruit that we use, making our sorbets taste like you are eating a freshly picked piece of fruit.

In addition to very high proportions of fruit, the other main ingredients are water, a little sugar, natural fibre, marine algae and carob flour. These last 3 ingredients, whilst used in very small amounts, are completely natural and help to maintain the incredible texture of our sorbets. Our sorbets do not contain any fat, and are all dairy free, gluten free and vegan.

Our sorbets are made fresh every day in our “laboratorio” located in our store. Each flavour is made in very small batches, making just enough gelato for that day. We specifically chose to use very small volume gelato machines that produce a maximum of 5 kilos at a time, so when a flavour runs out, we simply make it again! All in the name of freshness.

The pozzetti counter importantly maintains very consistent (and much warmer) temperature giving the sorbets the soft, smooth, velvety texture, and preserving the freshness. Below is a list of some of our sorbets. To honour the tradition of gelato as quintessentially Italian, we have kept the Italian names and translated them for you where necessary.

Apart from the few imported Italian citrus fruits (Southern Italy is famous throughout the world for its citrus fruit for their intense flavour) we love to use beautiful local fresh fruits, and organic fruits when possible.
